one-pot chicken pesto

Easy to make cheap if you find chicken on sale and freeze it. Buy store-brand pesto, it'll be cheaper and taste just as good.

ingredients

  • 4 chicken thighs, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced (or more, if you're me)
  • 1 box preferred pasta (I like bow-tie, but penne is more traditional i think.)
  • 1 carton chicken stock
  • spinach
  • 2-5 tbsp basil pesto
  • salt and pepper to taste

instructions

Add chicken to hot oiled frying pan or large saucepan (err on the side of too big, you'll need to stir this later) and season with salt and pepper. Fry over medium heat until browned and cooked through. Transfer to bowl for now.

Heat more oil in the pan and caramelize onion with garlic, or just saute until tender if you're in a rush.

Deglaze pan and add chicken stock and pasta. Stock should just cover pasta. Gently boil, stirring occasionally, until noodles are just barely al dente and the stock is mostly absorbed. There's no specific timing for this, just keep an eye on it and adjust heat as needed.

Once noodles are al dente, add cooked chicken and stir in pesto. Add spinach, cover, and heat through, stirring occasionally to encourage the spinach to wilt. Serve hot with parmesan if desired.
